By paying high prices for the best grapes (sourced from 70 to 100-year-old vines) and focussing solely on quality and a modern style, they have revolutionised the style and calibre of Primitivo. The continued success of A Mano is at least partly attributable to the knowledge that Mark and Elvezia have gleaned from over 18 vintages in the region. Not only are they getting access to Salento’s best grapes, but their growers have also come to realise that if they want the higher price paid by A Mano, they need to provide even better grapes than in previous years.

A MANO

A Mano 'Imprint' Primitivo Appassito is a red wine from Puglia made in the style of an Amarone. The grapes for this wine come from a selection of Mark Shannon's four favourite vineyards in the heart of the Primitivo growing region, located in the low hills east of Taranto in Puglia. The Primitivo vines are quite old; most are the original post-phylloxera plantings and range from 70 to 100 years old. The Primitivo grapes were dried for five weeks and on arrival at the cellars, the grapes were pressed, de-stemmed, cooled to 18°C and the must was allowed to ferment with natural yeast at its own pace. After fermentation the wine was aged for 6 months in a combination of cement and stainless steel before being bottled and then a further 4 months rest in bottle prior to release. The 'Imprint' Primitivo is a wonderful deep red in colour. On the nose, there are intense aromas of ripe dark fruit, crushed raspberries, plums and Mediterranean spices. On the palate, it is full-bodied with a great concentration of ripe, rounded fruit and long finish. A rare and ancient red Puglian grape variety, Susumaniello was used mostly as a blending component until a few years ago. The name means 'little donkey' in local dialect, from the enormous load the vines bear when young, although others say that it is so called because it is stubborn and difficult to manage. The Susumaniello grapes were rigorously sorted to ensure only those in pristine condition were vinified. Once at the winery, they were sorted again and cold fermented in stainless-steel tanks with very gentle pump-overs, to avoid over-extraction of the aggressive tannins characteristic of this variety. Post fermentation, the final blend was bottled without fining. Deep, inky purple-black in colour, this wine has intense aromas of blackberry, blueberry and chocolate, supported by notes of violets, blossom and Mediterranean herbs. This is a full-bodied and well-structured wine with powerful yet fine tannins. A fantastic freshness carries through the persistent finish. Sourced from two ancient vineyards planted on the red sand soils of the Ionian coast, the resulting wine is extremely dark and concentrated, with the enjoyable spiciness typical of Primitivo. The Primitivo vines are quite old; most are the original post-phylloxera plantings and range from 70 to 100 years old. A Mano’s `Prima Mano` Primitivo is vinified at a combination of warm and cool temperatures. Once fermentation was underway, the juice was drawn off and chilled. The remaining grape skins and pulp continued to ferment at warm temperatures in order to break down and release the maximum amount of colour and tannins. At the perfect moment, the chilled must was re-added and fermentation then continued at controlled cool temperatures. This style of winemaking allows for high levels of extraction while still retaining the primary fruit characters. `Prima Mano` is a powerful yet elegant wine infused with cherry, ripe plum, raspberry and dried rose petals, along with subtle spicy hints.
