The restoration of ‘Castello Romitorio’ began immediately, followed by the transformation of its overgrown lands into vineyards, and the construction of a cellar on the Castle’s ground floor. Sandro embraced the innovations that were taking place in the late 1980s in Montalcino and was at the forefront of propelling the region’s wines to their current renown. Twenty years later in 2005, Filippo Chia, Sandro's son joined the business and he has overseen the range quietly garner serious critical acclaim. Sandro Chia's fascinating artwork adorns the wine labels and his sculptures and art decorate the winery.

CASTELLO ROMITORIO

The Castello Romitorio Filo di Seta is an exceptional Brunello, the result of a rigorous selection of the best hand harvested grapes grown in the vineyards close to the castle. The vineyards that produce this wine are micro plots: the grapes are brought to optimal ripeness, then processed separately from fermentation to aging. These varietals, combined together, create a perfectly balanced Super Tuscan white wine, rich in minerality, vibrant and fresh. The juice is shortly macerated on the skins before gentle pressing and cooling. After natural settling, the liquid starts the fermentation process. The subsequent wine rests on the lees and then undergoes a period of bottle aging in the temperature-controlled cellar before release. It's especially hard to find a white wine of this texture and consistency. It opens to a light golden hue and a viscous appearance that translates to a creamy mouthfeel. Aromas include orchard fruit, baked pear, saffron and apple pie. You can taste the skins, and there is the slightest tannic imprint on the mid-weight finish, which is dry and laced with dusty minerality. Only 1,900 bottles were produced in this inaugural release.
