Today, the same spirit of traditional craftsmanship - adapted to new techniques - is retained.

Located at the foot of the Montsant mountain range , a protected natural park, Scala Dei is a fantastic location for growing the Grenache grape and where this variety can achieve its maximum potential. There are approximately 70 hectares of vineyards located across 41 different areas in the lands of Scala Dei that have been maintained for centuries. All the vineyards are cultivated in an organic and ancestral way, without herbicides or pesticides. There is no use of insecticides to control pests and all the treatments used are natural and ecological. Sheep manure is used as fertiliser and the aim is to reuse, as much as possible, all the byproducts of the winemaking process, the vineyard and the pruning as compost for the soil.

Scala Dei's commitment to reducing its carbon footprint has led it to change the bottle used for the wines that are produced in the greatest quantities to lighter bottles, thus reducing the CO emissions generated through their transport.

The Scala Dei Cartoixa is a Priorat red wine that combines Grenache and Carignan grapes which grow together in the same vineyards that, for centuries, were cultivated by the Carthusian monks. At the winery each variety is fermented separately in small cement tanks. Maceration lasts about 3 weeks - depending on the grape variety - and ageing takes place in oak for 18 months. Intense and persistent aromas of ripe black fruits - plums, persimmons - and a floral touch of violets intermingle with mineral notes provided by the slate, which give it a typical Priorat character. The ageing process gives it spicy aromas. On the palate it is a powerful, unctuous, smooth wine, with intense ripe tannins, imposing body, long and persistent finish over time. Since its re-foundation in 1973, the Scala Dei winery has been based on three fundamental pillars: altitude, soil and Grenache. However, the winery is also home to old vine Carignan, planted on slate slopes at the beginning of the 20th century. Scala Dei Heretge pays tribute to the winegrowers committed to the Priorat and the techniques of this heroic, mountain viticulture which date back to the middle of the last century. The Carignan grapes are sourced from four different vineyards with vines that range in age from 80 to 117 years old. At the winery the typical minimal intervention techniques employed by Scala Dei for their Grenache based wines is adopted, so the wine reflects the peculiarity of the terroir that is so characteristic of Priorat slate soils. Fermentation takes place in open cement vats with 30% of the stems and then remains in contact with the skins for 30 days, from vatting to pressing. Limited to approximately 3,000 bottles, this is a rich red wine with savoury complexity and textured tannins.
