After several years of reflexion, observation and analysis Chapoutier was able to produce the precious and rare wine'V.I.T' which stands for 'visitare interiore terrae' meaning 'visit the innermost earth' - a part of the mythological motto in finding the philosopher stone, or in Chapoutier's case the search for the best terroir in the Côtes-du-Roussillon.
