With this philosophy in mind, they sought out exceptional vineyards and launched their first release, the 2019 vintage, to international acclaim.\u003c\/p\u003e\n\u003cp\u003eRodrigo is a biodynamics pioneer, being the first winemaker to introduce this farming method to Chile when he hired Alan York as a vineyard consultant. This was a pivotal moment for Chilean viticulture and has since been adopted by many of the country’s leading wineries. At Far Mountain, he has continued to draw on his vast knowledge of biodynamic farming, working closely with likeminded growers in Sonoma’s Moon Mountain District AVA to slowly introduce the practice. Planted in 1972, the vines lie in a cool bowl at the bottom of the site and, unusually, are planted with heritage California clones and rootstock. They are dry farmed, which allows the vines to thrive in poor, fractured soils and results in a distinct saline character in the wine. At the winery, the grapes were whole cluster pressed at fractional pressures, collected separately and left to settle for 24-36 hours. The objective was to expose the must to oxygen at this stage, for elements prone to oxidation to drop out, and to have multiple pressings to follow through the ageing process. The must was then transferred to barrels, 18% of which were new and the remaining between one and four-years-old. It remained on the lees throughout the one-year ageing period, with regular stirring taking place in the early stages that reduced to once a month towards the end. Malolactic conversion was allowed for just 30% of the wine to add just the right amount of texture whilst retaining the Chardonnay’s primary fruit characters. The Far Mountain 'Myrna' Chardonnay combines the delicate floral characters of Bald Mountain with ripe yellow and exotic fruits, as well as salty, lime and green fruit-inflected notes. The name means 'beloved' in Latin, as it is such a passion project for Mai. The sappy texture of the wine makes its presence felt, and this grows into a more defined and powerful structure with layers of spice and a beautiful clear lift that persist through the finish. The vines are fifty years old and have never been irrigated, both rare qualities in California, and continue to produce exceptional fruit at twice the age that most vines in California need to be replanted. This is helped by deep 20 to 40 feet root systems, the volcanic bedrock of decomposed granite on which the vines lie and the cooling, high-elevation breezes. This combination lends the Cabernet Sauvignon a defined structure with an elegant, graphite-mineral profile. At the winery, the Cabernet Sauvignon is handled extremely gently, more similarly to the way many producers handle Pinot Noir. The clusters were destemmed with the aim of keeping whole berries, and then transferred to open top fermenters. The wine was settled and macerated, without any forced extraction, to accentuate the intense fruit characters and velvety plushness of the grape tannins. It was then racked to oak barrels, 27% of which were new and the remaining between one and four-years-old, to be aged for one year. This wine displays intense and ripe black fruits along with earthy and mineral characters, and a seamless, silky flow through the mid-palate. A sappy concentration and powerful, yet refined tannins remain on the structured finish. The name Fission was ultimately chosen to reference the textural and mineral characteristics the volcanic soils bring to the wine.
