Given the Mornington Peninsula’s reputation for cool-climate Pinot Noir and Chardonnay, it should come as no surprise that some inspiration is taken from Burgundy, but these wines are very much examples of the regional style, with freshness, elegance and balance at the fore. At the winery the fruit was gently whole-bunch pressed directly into all old French oak oak, where fermentation commenced spontaneously with ambient yeasts. Following fermentation, the wine was aged on lees (without battonage) for ten months. The wine was then bottled without fining and with minimal filtration. The Kooyong 'Beurrot' Pinot Gris displays classic aromas of fresh pear, pink lady apple and subtle citrus, with secondary notes of freshly picked spice and white florals providing complexity. The palate is bright and fresh with flavours of pear, apple and a hint of grapefruit.
