Following an extremely rigorous selection of the grapes, fermentation was carried out in small, conical stainless steel tanks, with an extended maceration on the skins and manual punch downs twice daily. Once alcoholic fermentation was complete, the wine was passed to new French oak barrels for malolactic and twelve months’ ageing. This is a deep, rich Merlot, combining dark forest fruits with spicy oak.
