The region, known for its extreme climate, mineral-rich soils and local natural springs, contributes to the powerful and complex profile that differentiates the Clase Azul Mezcal from those produced in the rest of Mexico. The Cenizo Agave from Durango takes between 12 and 15 years for the plant to mature before it blooms and can be harvested to produce mezcal. The slow, underground baking process utilising volcanic rock, produces sweet notes of peanut, brown sugar, honey, ash, wood and chocolate. The fermentation process using stone piles and red oak, contribute to notes of ripened fruit. The design of the bottle, hand-carved by Mexican artisans, is inspired by black clay pottery, one of the most representative styles of Mexican folk art, whose detailed process enriches the beauty and quality of each piece. This impressive triumvirate includes the Jolie-Pitts of Miraval, the Perrins of Beaucastel fame and the renowned Champagne grower and producer Rodolphe Péters of Pierre Péters. Friends Marc Perrin and Rodolphe Péters wanted to create a Champagne that combined the complexity of Chardonnay and the vibrancy of a young Pinot Noir. Having struggled to find what they were looking for in a rosé Champagne, in 2015 “we created the wine we couldn’t buy" says Marc. ‘Fleur de Miraval’ has its cellars in Le Mesnil-sur-Oger and is the only Champagne house to produce solely Rosé Champagne. This non-vintage Champagne is a blend of 75% Chardonnay and 25% Pinot Noir, all sourced from the Côte des Blancs. The Chardonnay comes from the great villages across the Côte des Blancs, from Cramant to Mesnil. The vines are 30 years old on average and are planted on chalk soils, which adds finesse, complexity and structure to the champagne. Rodolphe expressly sought out quality Pinot Noir from younger vineyards planted in the village of Vertus, in order to add tension, vivacity and freshness, as well as colour to the final blend, which was managed by using the saignée method. For the Chardonnay, 25% of the blend comes from the 2016 harvest from Le Mesnil and other villages in the Côte des Blancs, adding citrus zest and freshness. For added complexity, 25% of the blend was from Rodolphe’s ‘perpetual reserve’ system (which has wines dating back to 2007). The remaining 25% of the base wine is made up of seven year old Blanc de Blancs purchased ‘sur latte’. This process, known as ‘remise en cercle’, involves uncorking the Blanc de Blancs and emptying all the bottles into a tank where the wine is then de-gassed and added to the base wine. While extremely expensive, this process brings texture, complexity and richness to the blend. After blending, the base wines were bottled and aged on lees for three years. The champagne was disgorged in June 2020, and was bottled with a dosage of 4.5g/l. As Champagne is particularly sensitive to ‘light strike’, the damage caused by the wine being exposed to ultraviolet rays, each Fleur de Miraval bottle is lacquered so the wine is protected and retains its delicate perfumes. On the nose, ‘Fleur de Miraval’ opens with delicate aromas of acacia, blood orange, pink grapefruit and subtle notes of sweet pastries. On the palate it is poised, with bright acidity giving great tension to the wine. The elegant flavours of almond and candied orange peel are well balanced with a saline freshness and a fine, delicate mousse.[#intro]The very high expectations of this Rosé have been matched...and then some!...[/intro]

2014 marks only the fourth declared vintage of Rare Champagne’s Rosé. During the 1950s and early 1960s Cabernet Sauvignon was mostly used for blending, but Schubert’s breakthrough with the varietal as a stand-alone wine came in 1964 with the inaugural vintage. Early Bin 707s were typically open fermented under wax-lined header boards and matured in seasoned old oak (rather than new oak). The wine was not made from 1970 to 1975 (when fruit was directed to other wines) nor in 1981, 1995, 2000, 2003, 2011 or 2017 (when fruit of the required style and quality was not available). Full-bodied and with proven cellaring potential, Bin 707 retains a secure place among the ranks of Australia’s finest Cabernets. Unico isn't just a bottle of wine; it’s a lesson in patience. Most wineries are rushing to get their bottles onto shelves, but Vega Sicilia does the opposite. They keep Unico in the cellar until it has "found itself," sometimes waiting ten years or more before they let a single cork be pulled. Unico, an assemblage of Tempranillo and Cabernet Sauvignon, is a world-renowned icon and the flagship wine of Vega Sicilia. Of the almost 1,000 hectares that make up the Vega Sicilia estate, 210 are dedicated to the cultivation of vines, with nineteen different types of soil and fifty-five plots with very specific features. In the extraordinary management of these soils, the influence of the course of the River Duero and the passage of time have been crucial. Forty of these hectares are used to produce Unico, which is aged for a minimum of ten years between barrel and bottle, one of the longest ageing processes in the world. Both French and American oak are used, in new and used 225-litre barrels and 22,000-litre vats. Though long and complex, this maturation technique works wonders and the wines gain a myriad of nuances, a precise texture, and a wonderful depth over time. Thanks to this incredible terroir and unique ageing process, Unico can continue developing for decades. The 2016 vintage marks a special moment in the estate’s history. It is the first release fully shaped by technical director Gonzalo Iturriaga de Juan, who joined in 2016 with a mission of precision and balance. The origin of the name comes from the Carruades plateau, a group of plots adjacent to the chateau’s best vineyards, purchased in 1845 by Château Lafite. Carruades de Lafite is made according to the traditional Bordeaux method. Alcoholic fermentation is conducted in wooden, concrete and stainless steel vats. Gentle pumping-over helps to ensure a soft extraction and is carried out according to the specific characteristics of each tank. Total maceration time lasts for about 20 days. After malolactic fermentation, the wines are transferred into French oak barrels made by the Tonnelleries des Domaines in Pauillac for a period of 18 months approximately. A blend of Cabernet Sauvignon (51%), Merlot (42%), Cabernet Franc (5%) and Petit Verdot (2%) grapes the Carruades de Lafite opens with a wonderful floral bouquet alongside notes of ripe fruit, blackcurrants, cedar, and spices. A wine with astounding power and complexity countered by exemplary elegance. To craft this wine Ben sourced extraordinary Shiraz fruit from four outstanding vineyards in the renowned Ebenezer sub district at the northern tip of the Barossa Valley. The fruit was hand harvested from low yielding vines aged up to 110 years old. At the winery each parcel was fermented separately in small open fermenters and gently hand plunged. The wine was then matured for 16 months in 100% new French oak hogsheads with natural malolactic fermentation continuing in oak during maturation. The fine grained French hogsheads were of the highest quality with tannin profiles selected to best express the flavours of the individual parcels. Inky, opaque purple in colour with herbal aromas that accent a core of dark berry fruit. On the palate polished tannins balance the dominant fruit. Blackberries are layered over red, with mocha, liquorice and fresh-cut cedar. In Egyptian mythology, The Eye of Rã was the powerful feminine counterpart to the sun god Ra. I tasted 2018 The Eye of Rã the same week I tasted the 2020 Domaine de la Romanée-Conti releases, Spottswoode’s as yet unreleased 2020 Cabernet Sauvignon, and on the same day that I tasted 2020 Ornellaia – all wines with immense scores in my notes and, of course, all world-class creations. But more impressive, certainly to me, was the reaction from two South Australian members of the wine trade fraternity, neither of whom has any affiliation with Mr Glaetzer, who were both struck dumb by this wine. They happened to be around on the day I opened this bottle, so I brought it along to a couple of meetings for them to taste. One was open-mouthed, performing goldfish impressions, while the other was almost moved to tears as it brought back memories that she described as the ‘essence of the Barossa’! When a wine has this degree of deliciousness, extraordinary build quality, and perhaps most importantly, a massive emotional hook, it does its job perfectly. Made from the finest parcel of fruit in Ben’s Ebenezer vineyard, this is a wine that does not waver from its mission to graffiti Ben’s name on your palate with indelible Shiraz ink. The volume of fruit is staggering, but its delivery is incredibly measured and even, and this is the trick. Rã is not a monster wine but a monstrously long wine. It is perfectly polished and amazingly spicy, with never-ending layers of fruit and immense class. It is also drinking well, which is a surprise, but the 2018 vintage is generous with seamless fruit and unique allure. I feel it will maintain its welcoming and rewarding attitude for two decades, so you are in no hurry to pop a cork! While this icon wine has an iconic flavour, I must urge you to seek it out. Imagine all of Ben’s experience and skill in just one bottle – Rã is it." [#intro] Astounding power & complexity countered by exemplary elegance, the epitome of Barossa Shiraz...[/intro]

The original and most powerful expression of Penfolds multi-vineyard, multi-district blending philosophy, Grange is arguably Australia’s most celebrated wine and is officially listed as a Heritage Icon of South Australia. Located on a steep, south-facing slope overlooking the Marne River near Mareuil-sur-Aÿ, the plot's unique microclimate ensures grapes achieve extraordinary ripeness and concentration, resulting in a Champagne of immense power and longevity. The name 'Goisses' comes from an old regional word for "very difficult to work," a testament to the vineyard's punishing 45-degree gradient. This vintage is an assemblage of Pinot Noir (71%) and Chardonnay (29%) lees aged for eight years in the bottle, also referred to as second fermentation or “prise de mousse”, in the House’s historic cellars in Mareuil-sur-Ay. The very low dosage gives full expression to the vinosity and minerality of this exceptional vineyard. A beautiful golden colour with a lovely, persistent ring of bubbles, the nose is very fresh and expressive, presenting notes of yellow fruit, mirabelle plum and greengage. On being left to breathe, floral notes appear: vine and acacia blossom. The finish has a slightly roasted character. The palate is fruit-driven and intense, with an enveloping texture, notes of fresh fruit, honey and linden. The finish displays taut minerality and pleasant salinity. A Champagne of profound complexity, power, and minerality, Clos des Goisses is on a par with the best Burgundy reds for pairing with game, truffles, morel mushrooms and washed-rind cheeses.
