Sustainability is at their core pervading most elements in how they run their business. The distillery is powered by the Australian sun through a 30kw array of solar panels on it’s roof. The power runs down cables to run our pumps, mixers, boilers and chillers that are necessary to produce their range of spirits and when they are not using the power it is fed back into the grid. The distillery is designed with energy efficiency features such as producing their hot water for mashing from the heat generated by distilling. The wash is double distilled in custom designed copper pot stills to produce a clean, sweet and malty new make spirit. Full size French and American oak ex port\/tawny casks were sourced from Seppeltsfield winery and reformed by a Tasmanian cooperage by breaking down and reforming into shaved and charred 100L casks. All casks were 'first fill' providing an amazing flavour from the Port style wine previously held in the cask. To the nose this whisky displays whole bunch fruit with a sweet vanilla nose. On the palate, sweet plums and a baked dark berry pie with a soft caramel and buttery outlay leading to an elegant but robust red currant essence. The finish is hot and crisp to begin, leading to a long bittersweet finish. Captured in contemporary glass, sculpted with the eroded textures of weathered sandstone cliffs that border the Sydney coastline and sealed with a truly unique sandstone stopper. First fill 200 litre Bourbon casks from Kentucky form the backbone of this whisky. Maturation was enhanced by also filling recoopered casks sourced from coopers in Tasmania and South Australia, where they were broken down and reformed into 100 litre casks. All casks were first fill having never held whisky only bourbon previously, providing an amazing roundness in flavour. On the nose gentle vanilla, tropical fruits and caramel toffee. The palate  is mellow and sweet with honey and pears, green fruits and a backbone of malt. The finish is long, with delicate vanilla and cinnamon spice. Captured in a contemporary glass bottle, sculpted with the eroded textures of weathered sandstone cliffs that border the Sydney coastline and sealed with a truly unique sandstone stopper, this Single Malt Whisky is presented in a Coastal Stone gift tube. This was first released in 2021 and only 1000 bottles were produced.
