Alcoholic fermentation took place with wild yeasts in stainless steel tanks to retain the purity of the fruit and the nuances of the terroir. Once the initial alcoholic fermentation was complete, the vinification continued with the addition of must to initiate the refermentation and ‘presa di spuma’ in the bottle, capturing the gentle sparkle and the richness in texture from the lees.
