At Ridge the team let this unique vineyard site create the wine rather than try to steer it toward a particular style in the cellar. They accomplish this through a combination of natural, low-tech, hands-off winemaking techniques: keeping all grape varieties and all parcels separate, fermenting in small fermentors using only natural yeasts, and transferring the separate lots into air-dried American oak barrels to undergo full, natural malolactic fermentation. At many points along the way, they taste each lot and assess its individual qualities. This selection process is crucial to creating Monte Bello, a wine that consistently reflects the character of the vineyard and not the whim of the winemaker. Monte Bello has often been called America’s First Growth, as it is the finest domestic example of a classic Bordeaux blend in which Cabernet Sauvignon predominates. Exhaustive tasting of test blends during the assemblage process determines how much, if any, Merlot, Petit Verdot, or Cabernet Franc will be included in the finished wine. Each grape variety makes a contribution to the flavour and structure of the wine - with Cabernet Sauvignon often showing cassis and adding tannin, Merlot giving plum character and a bit of softness, Petit Verdot contributing dark colour and earthiness, and Cabernet Franc adding fragrance and a hint of spice. Each vintage is different, but year after year Monte Bello proves to be a consistently outstanding wine with great structure, complexity, and balance. And, in terms of age worthiness, it has been known to lay down for several decades with elegance and ease. Ridge 2019 Monte Bello is a blend of Cabernet Sauvignon (82%). Merlot (9%), Petit Verdot (8%) and Cabernet Franc (1%). During blind tasting, a record forty-one separate lots were assembled to create this vintage of Monte Bello. In the cellar, the winemaking team coaxes unparalleled suppleness from the fruit through separate vinification in conical vats, followed by 17 months of careful maturation in a combination of French and Hungarian oak barrels. This highly precise oak treatment gives the wine its magnificent structural frame, perfectly smoothing out the firm tannins while allowing the vibrant, native acidity of the Sangiovese to remain the refreshing, driving force on the palate. On the pour, this premium Tuscany red reveals a mesmerising aromatic profile filled with fresh redcurrants, dark cherries, blood orange, and sweet pipe tobacco, accented by subtle hints of liquorice and crushed white pepper. Unico isn't just a bottle of wine; it’s a lesson in patience. Most wineries are rushing to get their bottles onto shelves, but Vega Sicilia does the opposite. They keep Unico in the cellar until it has "found itself," sometimes waiting ten years or more before they let a single cork be pulled. Unico, an assemblage of Tempranillo and Cabernet Sauvignon, is a world-renowned icon and the flagship wine of Vega Sicilia. Of the almost 1,000 hectares that make up the Vega Sicilia estate, 210 are dedicated to the cultivation of vines, with nineteen different types of soil and fifty-five plots with very specific features. In the extraordinary management of these soils, the influence of the course of the River Duero and the passage of time have been crucial. Forty of these hectares are used to produce Unico, which is aged for a minimum of ten years between barrel and bottle, one of the longest ageing processes in the world. Both French and American oak are used, in new and used 225-litre barrels and 22,000-litre vats. Though long and complex, this maturation technique works wonders and the wines gain a myriad of nuances, a precise texture, and a wonderful depth over time. Thanks to this incredible terroir and unique ageing process, Unico can continue developing for decades. The 2016 vintage marks a special moment in the estate’s history. It is the first release fully shaped by technical director Gonzalo Iturriaga de Juan, who joined in 2016 with a mission of precision and balance. It is faithful to the viticultural philosophy that characterises VIK wines: minimal intervention and zero applications in the vineyard. Centuries of ancestral wisdom combine with the gentle warmth of the sun to naturally shape an exceptional wine. The grapes for Stonevik come from vines planted in the Pan de Azucar, Cerro al Medio and Boqueron plots where the vines are sustainably cultivated. VIK created a space at the heart of the native forest surrounding the vineyard, where the fermentation took place using the 'barroir' technique. The ‘barroir’ concept was born out of barrels made out of new imported French oak being toasted with wood from fallen oaks on the vineyard, enabling VIK to make and toast personalised barrels in their own coopery. The wine was aged in seven amphorae (three to allude to the universe and four to planet Earth). Five of them contained Cabernet Franc, one Cabernet Sauvignon and one Carménère. The amphorae were arranged to emulate an ancient sundial, allowing the wine to unfurl its full potential in alignment with the stellar rhythms and telluric energies of the earth’s electromagnetic fields. The oval shape of the amphorae has been designed to adjust for the movement of the Earth, and the thermal range and atmospheric pressure, stimulating the wine into a continuous circular motion to achieve maximum expression. Being harmoniously positioned to create a Mandala, the light and shadow of day and night passed through the amphorae, in accordance with the cycles of each season, harnessing their energy. The amphorae were made by local craftspeople using techniques inherited from the generations who passed on their trade. Produced from clay extracted directly from the terroir at a depth of more than six metres, along with kaolinite, the micro-oxygenation imbues mineral notes, aromas and flavours of Millahue. A wine with astounding power and complexity countered by exemplary elegance. To craft this wine Ben sourced extraordinary Shiraz fruit from four outstanding vineyards in the renowned Ebenezer sub district at the northern tip of the Barossa Valley. The fruit was hand harvested from low yielding vines aged up to 110 years old. At the winery each parcel was fermented separately in small open fermenters and gently hand plunged. The wine was then matured for 16 months in 100% new French oak hogsheads with natural malolactic fermentation continuing in oak during maturation. I tasted 2018 The Eye of Rã the same week I tasted the 2020 Domaine de la Romanée-Conti releases, Spottswoode’s as yet unreleased 2020 Cabernet Sauvignon, and on the same day that I tasted 2020 Ornellaia – all wines with immense scores in my notes and, of course, all world-class creations. But more impressive, certainly to me, was the reaction from two South Australian members of the wine trade fraternity, neither of whom has any affiliation with Mr Glaetzer, who were both struck dumb by this wine. They happened to be around on the day I opened this bottle, so I brought it along to a couple of meetings for them to taste. One was open-mouthed, performing goldfish impressions, while the other was almost moved to tears as it brought back memories that she described as the ‘essence of the Barossa’! When a wine has this degree of deliciousness, extraordinary build quality, and perhaps most importantly, a massive emotional hook, it does its job perfectly. Made from the finest parcel of fruit in Ben’s Ebenezer vineyard, this is a wine that does not waver from its mission to graffiti Ben’s name on your palate with indelible Shiraz ink. The volume of fruit is staggering, but its delivery is incredibly measured and even, and this is the trick. Rã is not a monster wine but a monstrously long wine. It is perfectly polished and amazingly spicy, with never-ending layers of fruit and immense class. It is also drinking well, which is a surprise, but the 2018 vintage is generous with seamless fruit and unique allure. I feel it will maintain its welcoming and rewarding attitude for two decades, so you are in no hurry to pop a cork! While this icon wine has an iconic flavour, I must urge you to seek it out. Imagine all of Ben’s experience and skill in just one bottle – Rã is it." [#intro] Astounding power & complexity countered by exemplary elegance, the epitome of Barossa Shiraz...[/intro]

The original and most powerful expression of Penfolds multi-vineyard, multi-district blending philosophy, Grange is arguably Australia’s most celebrated wine and is officially listed as a Heritage Icon of South Australia. Produced by the prestigious Oremus estate (owned by the Álvarez family of Vega Sicilia fame), the 2010 vintage stands as a testament to their dedication to this historic Hungarian tradition. Due to its incredible concentration, this wine is legally classified as an extraordinary natural product rather than a standard wine, with an alcohol content of just 2.5% and a residual sugar level of 530 grammes per litre. Eszencia is only possible thanks to the unique microclimate of the Tokaj region, which encourages noble rot (Botrytis cinerea). This fungus dehydrates the grapes, concentrating the sugars, acids, and flavours into tiny, shrivelled berries. The berries are collected individually, sometimes one by one, over several passes through the vineyard. The berries are collected into large tubs, and the Eszencia is the precious liquid that slowly seeps out under the pressure of the grapes' own weight, without any mechanical pressing. It is then aged for years in the deep, dark cellars of Oremus, developing its profound complexity. The 2010 Eszencia is liquid history.
