Secondary fermentation took place in underground cellars at the optimum temperature for slow, cool, traditional-method bottle fermentation with an average of 18 months on lees before disgorging. A delicate rose petal hue with incredible fruit-driven purity and an abundance of fine bubbles. Aromas evoke wild strawberry and honeyed redcurrant, while the fresh palate brims with sherbet, balanced by a creamy, long finish. With a cascade of exceptionally fine bubbles, expressive red berry and almond aromas lead to a vibrant yet rounded palate, evocative of raspberry frangipane with a streak of bergamot orange.
