Winemaking here is often described as "heroic" because the vineyards are incredibly steep, terraced, and carved directly into the rocky mountain slopes. Because of this extreme, high-altitude location, the wines possess a brilliant, crisp, and refreshing mountain character that is hard to find anywhere else.

The region is a treasure trove for those who love discovering rare and unique grapes. You will find fantastic, zesty white wines made from local varieties like Prié Blanc, which thrive in the crisp alpine air. On the red side, the region produces bright, light-bodied, and energetic wines from grapes like Petit Rouge and Picotendro (the local name for Nebbiolo). If you are looking for something completely unique, vibrant, and off the beaten track, Valle d'Aosta offers some truly brilliant, conversation-starting wines.

The vineyards for the Ermes Paves Blanc de Morgex et de la Salle are located in the communes of Morgex and La Salle at the foot of Monte Bianco, on the sunniest slopes of the Dora Baltea river side. The vineyards are between 900 to 1200 metres above sea level and are the highest vineyards in Europe. Their isolation and altitude naturally protect the vines of Prié Blanc from phylloxera and therefore all vines are ungrafted. The soil is mountain sand of granite origin. Vines are trained by the traditional "pergola bassa" method, to protect them from low, nighttime temperatures even during the growing season. All the grapes were harvested manually and once in the winery, the whole bunches were gently pressed with a pneumatic press. Fermentation was carried out in stainless-steel vats and the wine was kept on the lees for six months with frequent bâtonnage. During this time malolactic fermentation was allowed to take place in order to smooth the high acidity levels of Prié Blanc. This wine shows delicate floral aromas on the nose, with hints of herbs. The palate is very refreshing and well balanced, with flavours of pears and a touch of white pepper. Excellent as an aperitif!
