A variety of wine styles are produced in the area, including the 'Appassimento' style Amarone della Valpolicella and its sweet counterpart Recioto. Appassimento is a process of making wine which involves drying the grapes after harvest in the winery - which concentrates the sugars, flavour compounds, and acidity - before pressing. The time of pressing is dictated by the Valpolicella consortium so that a desired minimum level of concentration is achieved. Wines made by this process have an increase in alcohol and/or sweetness due to the loss of water.

Most basic Valpolicellas' are light, fragrant table wines produced in a novello style and released only a few weeks after harvest.

Valpolicella Classico is made from grapes grown in the original Valpolicella production zone, whilst Valpolicella Superiore is aged for at least one year and has an alcohol content of at least 12 percent.

Valpolicella 'Ripasso' is a form of Valpolicella Superiore made using the 'Ripasso' winemaking technique. Located in Val D’Illasi, the estate consists of 65 acres of vines planted to traditional indigenous varieties of Corvina, Corvinone, Rondinella, Oseleta and Croatina. The estate vineyards and farm are located where the slopes begin to rise toward the mountains and sit 1,000 feet above sea level. The loose, alluvial soils, meticulous pruning and scrupulous viticultural techniques ensure remarkable-quality grapes. The Dal Fornos use traditional methods to grow the finest fruit, and then employ modern techniques to produce the best wines - classic in expression and modern in purity. The varietal composition of the Dal Forno Romano Valpolicella Superiore 2017 is Corvina (70%), Rondinella (20%), Croatina (5%) and Oseleta (5%). Fermentation takes place in temperature-controlled steel tanks equipped with a sophisticated computerised system that allows automatic punching-down over a period of around 15 days, including the final two days of maceration. After racking, the Valpolicella rests for a few days in stainless steel tanks, which thanks to their special shape, allow easy decanting, and is then matured in new barriques. For the 2017 vintage, the Valpolicella was aged for 36 months.

“Taking this in reminds me of all of the desserts, spices and confections experienced on Christmas day. An array of medicinal cherries, plum sauce, ginger cookies, cloves, cinnamon and dried roses captivate. There's tremendous depth here, but it maintains fantastic freshness. A blend of Corvina, Corvinone and Rondinella grapes the wine is vinified from a combination of dried and undried grapes. The undried grapes were destemmed and fermented immediately after the harvest. The dried grapes were allowed to dry gently in well-ventilated rooms for approximately four to five months, concentrating the flavours, sweetness and colour. The dried grapes were added later; they were fermented in stainless steel for one week, prior to being pressed at the end of December. The wine was then transferred to small barrels to finish fermentation. It was then matured in wood for eight to 10 months. The bunches, selected and collected in crates, are placed in a special ventilated room to be dried according to the famous drying process (Appassimento). The grapes loose at least 35% of their original weight, thus concentrating sugars, aromatic components and noble tannins. In the following January, the soft pressing takes place and the fermentation starts and a long maceration allows maximum extraction of the fruit. The wine remains for 24 months in French oak tonneaux and in larger barrels (3500 and 5000 liters); after bottling, it remains to refine at least a year before being released. The nose displays aromas of dried fruits, including plum and black cherry, complemented by sweet spices like cinnamon and hints of herbs and tobacco. Located in the Veneto, northeast of Verona, in the hill that divides Montorio from the Valle d’Illasi, Musella follows biodynamic principles in its vineyards. To produce this Amarone della Valpolicella only the healthiest and ripest bunches of grapes are harvested and they then undergo a particular drying process (Appassimento) which takes place on special drying racks in naturally, well-ventilated rooms. During this process, the grapes lose at least 40% of their original weight, concentrating sugars, aromatic compounds and noble tannins. In January the grapes are gently pressed and fermentation begins at the low winter ripening temperature (13-17 C).
