Forced to compete fiercely for water and nutrients in the tough volcanic soil, the vines produce tiny amounts of incredibly flavourful, dark grapes. To capture the sheer power of this vineyard, the fruit is fermented using natural wild yeasts and the bunches are left completely whole during the process. This traditional method gives the wine a remarkably firm, savoury backbone. It is then aged in French oak barrels to soften and mature before bottling. In the glass, it is deeply coloured and brooding. You will find bold aromas of dark plum and black cherry mixed with rich forest floor and a distinct peppery spice.
