These venerable vines yield incredibly tiny amounts of highly concentrated fruit, allowing the winemaking team to craft a profoundly deep Australian sweet wine that reflects decades of careful cultivation in this warm corner of Victoria. Pouring a dark, syrupy mahogany, the aroma immediately presents dense layers of sticky date pudding, roasted walnut, and dark treacle. This remarkable depth is achieved through a traditional solera system, where younger wines are continuously blended into historic oak casks containing much older vintages. Because this fractional blending process never fully empties the oldest barrels, every bottle holds a tiny drop of wine dating back many decades. The resulting texture is intensely viscous, completely coating the palate with rich dark chocolate and dried fig, yet a brilliant streak of natural acidity ensures the finish remains exceptionally clean. Such a commanding fortified wine requires equally robust desserts to stand alongside it. It performs beautifully poured over a rich dark chocolate torte, served next to a steamed treacle sponge, or paired with a board of mature blue cheeses and roasted nuts.
