All of the grapes were hand-picked separately, packed in crates, and rested in a cold room for 24 hours. Bunch sorting was done the next day, after which the grapes were transferred to open-top fermenters (100% whole bunch) where it cold-soaked for 3 days before natural fermentation started, supported by two to three punch-downs per day to promote extraction. The wine spent a total of 16 days on the skins before being lightly pressed. After this, 60% of the juice went to 500L old-oak barrels and 40% matured in concrete. The vintage was then allowed to mature for 10 months before it was racked, blended, and bottled. Deep ruby in colour the Wolf \u0026amp; Woman Syrah displays aromas of red and black fruit, fynbos, spice and dark pepper. The palate has good fruit concentration, savoury with spice, structured and a balanced acidity.
