Everflyht Vineyard was founded by husband-and-wife team Sam and Ben Ellis in 2016. Their winemaking journey began with the planting of an initial 2.8 hectares of traditional sparkling variety vines at the foot of the iconic Ditchling Beacon, nestled within the South Downs National Park in East Sussex. The unique name 'Everflyht' is a clever historical nod to the six mythical martlets found on the traditional Sussex crest, which represent knowledge, adventure, and learning. Said never to touch the ground, these birds are 'ever-in-flight' and inspire the estate's distinctive feather emblem along with their core motto: "never settle."

The true distinction of Everflyht lies in its ambitious, deeply progressive approach to modern farming. The estate has positioned itself at the cutting edge of regenerative viticulture in the UK, moving far beyond standard sustainability to actively restore the natural health of the environment. By fostering living, biodiverse soils, eliminating harsh chemical interventions, and encouraging natural ground cover between the rows, they ensure the vines develop incredibly strong root systems.
