Wiston Estate is a beautiful, family-run property nestled in the heart of the rolling South Downs in West Sussex. While the estate has been held by the Goring family since 1743, its journey into premium viticulture began much more recently in 2006. Born from the long-held dream and tenacity of Pip Goring, the original sixteen-acre vineyard was planted to establish a world-class winemaking legacy on home soil. Today, the day-to-day running of the vineyard and winery is steered by Richard and Kirsty Goring, maintaining a tight-knit family commitment to crafting traditional-method English sparkling wine of exceptional finesse.

The brilliance of Wiston’s fizz is anchored entirely in its dramatic, south-facing chalk escarpment. This steep hill acts like a natural sun-trap, allowing Chardonnay, Pinot Noir, and Pinot Meunier grapes to achieve optimum ripeness while holding onto the intense, electric natural acidity that defines great sparkling wine. Guided by winemaker Marcus Rayner-Ward, the team employs biodynamic principles across the vines, working in harmony with nature's natural cycles and fostering rich biodiversity in the soil. To add layers of complexity, the estate-grown fruit is carefully supplemented by pristine grapes from a hand-selected group of long-term partner growers across the south-east of England.

In the cellar, Wiston embraces time-honoured, traditional methods to coax maximum expression from their chalk-grown fruit. A key secret to their remarkably smooth texture is the use of a traditional Coquard press - one of only a handful outside of Champagne - which coaxes out the juice with incredible gentleness to avoid bitter skin tannins. The resulting wines offer a stunning balance of crisp green apple, zesty lemon, and deep, creamy biscuit notes.
