Bally Rhum is distilled directly from the freshly pressed, fermented sugarcane juice during the harvest season. This process captures the raw, vibrant, and grassy essence of the cane, delivering a final spirit that is drier, more complex, and distinctly vegetal and peppery than its sweeter molasses-based cousins.
