Domaine Sigalas Santorini Assyrtiko is a thrillingly crisp and vibrant white wine from one of the Greek island's most revered estates. Made entirely from Assyrtiko grapes grown on Santorini's famous volcanic soils, the vineyard looks completely unlike a standard European estate. To protect the fruit from fierce Aegean winds and scorching sun, the vines are woven into low-lying baskets directly on the ground, a traditional island method known as kouloura. In the winery, the juice is fermented strictly in stainless steel and rested briefly on its fine lees. This technique completely avoids heavy oak, keeping the wine incredibly fresh while adding just a touch of creamy texture. The result is a bone-dry, razor-sharp white that delivers a massive hit of zesty lemon, lime, and fresh peach.
