Valdespino Oloroso Solera 1842 VOS (Very Old Sherry) is a stunningly dark and inviting pour, making it an absolute treat for anyone who loves deep, rich flavours. While Oloroso is traditionally bone-dry, this expression blends in a tiny splash of naturally sweet Pedro Ximénez before entering the ageing process. The result is a beautifully smooth, slightly sweetened style that bursts with mouth-watering notes of dark chocolate, toasted walnuts, and sticky dates. The magic behind this depth of flavour is the traditional Spanish solera system. Rather than emptying a barrel completely to bottle it, a small amount of older wine is drawn from the bottom row of casks. These barrels are then carefully topped up with slightly younger wine from the row above, and the process continuously repeats. This brilliant blending method ensures that every glass poured contains a tiny, living fraction of the original wine laid down back in 1842. Because it has spent over twenty years slowly evaporating and concentrating in these wooden casks, the liquid has developed a thick, velvety texture that coats the mouth.
