By Farr 'Tout Près' Pinot Noir 2022
By Farr Tout Près is an intensely concentrated Pinot Noir from the Moorabool Valley in Geelong, Victoria. The name translates as "very cosy" referring to the densely packed vineyard where these vines grow side by side. Forced to compete fiercely for water and nutrients in the tough volcanic soil, the vines produce tiny amounts of incredibly flavourful, dark grapes. To capture the sheer power of this vineyard, the fruit is fermented using natural wild yeasts and the bunches are left completely whole during the process. This traditional method gives the wine a remarkably firm, savoury backbone. It is then aged in French oak barrels to soften and mature before bottling. In the glass, it is deeply coloured and brooding. You will find bold aromas of dark plum and black cherry mixed with rich forest floor and a distinct peppery spice. When you take a sip, it is powerful and earthy, driven by a strong tannin structure that lingers long after the final drop. Because this red wine is so robust and deeply savoury, it needs a serious plate of food to match. It is an outstanding pairing for a rich venison wellington, a hearty beef bourguignon, or roasted grouse.
