Michel Chapoutier is famous for his legendary work in the French Rhône Valley, but he created the Domaine Tournon Mathilda Shiraz to showcase exactly what happens when that same winemaking philosophy is applied to the striking landscape of Victoria, Australia. Sourced purely from organically farmed vineyards in the Pyrenees region, the vines dig deep into unique clay and iron-rich soils. The result is a vibrant, cool-climate Australian Shiraz that beautifully balances the generous sunshine of the New World with the elegant restraint you would normally expect from a classic French red. Rather than burying the fruit in heavy vanilla oak, the team ferments and ages this wine entirely in cement and stainless steel tanks. This keeps the liquid incredibly fresh and energetic. In the glass, it pours a brilliant dark ruby and leaps out with aromas of ripe blackberries, fresh violets, and a distinct savoury dusting of white and black pepper. On the palate, this Victoria red wine is immediately supple and juicy, delivering an abundance of dark berry fruit framed by completely smooth, silky tannins that glide rather than grip.
